WEEKLY MEAL PLAN: MARCH 31.

How is it the last day of March? This month has been a little crazy with Violet's stitches, my foot injury, my first taught class, another Sisters Series webinar, my birthday (+ multiple dinners out with friends to celebrate), a day date and my husband's birthday yesterday.

Sunday: Out with friends for a belated birthday dinner
Monday: Mexican Skillet
Tuesday: Stuffed pork chops + quinoa + roasted asparagus (my husband made up the pork stuffing recipe, but it was a combo of ricotta, mushrooms, breadcrumbs and some other seasonings)
Wednesday: Stuffed pepper soup 
Thursday: One pot beef stroganoff
Friday: Dinner at my Uncle's
Saturday: Chicken + dumplings
