WEEKLY MEAL PLAN: MARCH 3

This week was going along just fine when whack! My daughter slipped off a step stool and smacked the bottom of her chin on our toilet Wednesday night. 2+ hours in urgent care and 4 stitches later, we were both traumatized! 

There is nothing worse as a mother than not being able to help when your child is in pain and scared. You feel absolutely horrible, guilty, and even experience pain as you wish it would all be over for them. Plus, hearing them crying and calling for you to make it all better makes it even worse. I think I'm more traumatized than her after it all!

Not to mention, I got so lightheaded from seeing everything that I had to lie down on the hospital room floor (GROSS) and put my legs up on the wall TWICE, all while my poor girl was restrained on a hospital bed out of my reach and crying for me. Man, talk about an anxiety producing event!

As we walked out of the clinic, she said in a sad voice, "Doctors are the worst." 

Thankfully, after a good night's sleep, she woke up happy and has seemingly forgotten about it all, but I don't think I will for a while! 

Cheers to a day off today and the weekend ahead!

Here's what we ate this week!

Sunday: Stuffed Cabbage Casserole (I still argue that cabbage is the most underrated vegetable there is!)
Monday: Homemade Chicken Nuggets with Oven Fries (similar recipe)
Tuesday: Cream Cheese Chicken Chili (I skip the ranch packet and add a sauteed pepper and onion to mine)
Wednesday: Trader Joe's Coconut Shrimp, quinoa w. pesto and roasted broccoli
Thursday: I met up with a friend, so my husband picked up takeout
Friday: One Pot Beef Stroganoff
Saturday: Baby Shower (no meal planned)
