WEEKLY MEAL PLAN: FEB 17 + A VANCOUVER FOOD RECAP

After a week off meal planning while I was in Vancouver for work last week, I was back at it in the kitchen again this week. I'll admit that it was nice to not cook for almost an entire week, but it wasn't so nice not having much control over my meal options and I definitely splurged a bit more than I would have at home. I'm not going to beat myself up over it because I ate some delicious food and had great quality, kid-free time with my husband for a few days after my work meeting and that's what life is all about! 

I had my first (second and third) Tim Horton's experiences, ate some delicious cannolis and nanaimo bars (OMG so good) from the Granville Public Market, went out to sushi at a hole in the wall with only 16 seats for a total of $25, ate a delicious filafel wrap and homemade pizza with all natural and organic ingredients in Whistler, tried my first (and second) Caesar, which is essentially a spicier bloody mary with these amazing spicy pickled green beans, and ate real, Canadian poutine

...and all that was just in the 2.5 days that my husband joined me! The rest was hotel food for a work conference, but overall, that was good, too. 

Anyway, here's what we ate this week!

Sunday: Tex Mex Casserole
Monday: Sheet pan chicken (I used chicken thighs, sweet potatoes, apple and cabbage)
Tuesday: Crockpot Stuffed Pepper Soup (I used uncooked sweet Italian Sausage from Trader Joe's, and sauteed my peppers and onions before putting them in the crock pot.)
Wednesday: Pork chops with roasted broccoli + cabbage and quinoa
Thursday: Burgers + potato wedges
Friday: Chicken fried rice
Saturday: Pork shoulder from the Green Egg
